Assorted vegetables (such as bell peppers, zucchini, eggplant, carrots, cherry tomatoes, and red onion), cut into bite-sized pieces
1/4 cup Scott's Mediterranean Garlic Marinade
Salt and pepper to taste
Fresh herbs for garnish (optional)
Preheat your oven to 400°F (200°C).
In a large mixing bowl, add the assorted vegetables.
Pour the Scott's Mediterranean Garlic Marinade over the vegetables and toss until they are evenly coated. Let them marinate for about 10-15 minutes.
Line a baking sheet with foil for easy cleanup. Spread the marinated vegetables in a single layer on the baking sheet.
Place the baking sheet in the preheated oven and roast the vegetables for about 20-25 minutes, or until they are tender and slightly browned. You can stir them halfway through the cooking time to ensure even roasting.
Once roasted, remove the vegetables from the oven and transfer them to a serving dish. Garnish with fresh herbs, salt and pepper if desired.
